El presente artículo tiene como objetivo analizar el conjunto de actividades, acciones y procesos que distinguen a los diferentes actores que intervienen en la distribución de alimentos y bebidas, particularmente en los denominados comerciantes modernos, es decir en aquellos comerciantes que poseen tiendas o unidades comerciales con un enfoque de venta y servicio directo al consumidor. La presente investigación se sustenta en información de fuentes secundarias especializadas en el tema. Aunque algunas pueden abordar un contexto global o propio de otros ámbitos regionales, en general se refiere a México. Con ello, se contribuirá a la comprensión del nuevo patrón dominante de abastecimiento y distribución de alimentos que existe en ese país. De esta manera, se dispondrá de un marco referencial para entender si los alimentos ofertados corresponden con el crecimiento de la demanda en calidad, regularidad, cantidad y diversidad.
The aim in this paper is to analyze the set of activities, actions and processes that distinguish different actors involved in the distribution of food and drinks, and especially the so-called modern traders, which means sellers who own shops or commercial units that have a focus on direct sales and services. This research is based on information of secondary sources specialized on this subject. Although some of them may approach from a global or regional areas, in general it refers to Mexico. This will contribute to the understanding of the new dominant pattern of supply and distribution of food that exists in this country. Thus, there will be a frame of reference to understand if the food offered correspond with the growth of the demand in quality, regularity, quantity and diversity.
