La importancia de los establecimientos de alta cocina en los últimos años en España ha ido incrementando. En este sentido, se ha aumentado la importancia de los sistemas de autorregulación que garantizan la alta calidad de los productos y servicios ofrecidos por estos establecimientos, lo que hace que la intervención administrativa para controlar la calidad sea cada vez menor. Sin embargo, la Administración no puede desaparecer de este universo, pues existen otros objetivos de interés general cuyo cumplimiento debe garantizar. Por eso, aunque no sea utilizando necesariamente mecanismos de limitación, sino de fomento, la Administración debe estar presente.
The importance of fine dining establishments in Spain has been increasing in recent years. In this regard, the importance of self-regulation systems that guarantee the high quality of the products and services offered by these establishments has increased, resulting in a decrease in administrative intervention to control quality. However, the Administration cannot disappear from this world, as there are other objectives of general interest whose fulfillment it must guarantee.
