En el presente proyecto de investigación se propuso la elaboración de una galleta proteica a base de avena, frutos secos y sangre bobina, con la finalidad de incentivar a la población adoptar buenos hábitos alimenticios y así, reducir las cifras de anemia en el país. Para ello, se realizó un diagnóstico y análisis sectorial, en el cual se estableció el entorno de la investigación, los aspectos de la alternativa seleccionada y los aportes que traerá, asimismo, se cuantificó la demanda, la oferta, el análisis de los precios y el estudio de la comercialización. De la misma manera, se determinó la inversión, el presupuesto de S/ 146.480,00 y el punto de equilibrio, los cuales fueron necesarios para determinar la conveniencia de llevar a cabo o no, el proyecto, desde el punto de vista financiero, haciendo uso del flujo de caja y herramientas financieras como el VAN, TIR, IR y el B/C.
This research project proposed the elaboration of a protein cookie based on oats, nuts and bovine blood, in order to encourage the population to adopt good eating habits and thus reduce anemia rates in the country. For this purpose, a sectorial diagnosis and analysis was carried out, in which the research environment was established, the aspects of the selected alternative and the contributions it will bring, as well as the demand, supply, price analysis and marketing study were quantified. In the same way, the investment, the budget of S/ 146,480.00 and the break-even point were determined, which were necessary to determine the convenience of carrying out or not, the project, from the financial point of view, making use of the cash flow and financial tools such as NPV, IRR, IR and B/C.
