La primera comunidad hispana en las Antillas, establecida en la nueva ciudad de La Isabela, se enfrentó a al reto de sobrevivir y, al mismo tiempo, a un primer encuentro entre las gastronomías hispana y americana. Pese a su corta existencia, representa una etapa decisiva y necesaria para el devenir de la colonia. Las dificultades inherentes a la conquista, con el consiguiente choque cultural y biológico y sus dramáticas consecuencias para los nativos, no impidieron una transformación de aquellas sociedades desde la perspectiva alimentaria, realidad que se puede observar a través de lo sucedido en aquella población.
The first Hispanic community in the Antilles, established in the new city of La Isabela, faced the challenge of survival and, at the same time, a first encounter between Hispanic and American cuisines. Despite its brief existence, it represents a decisive and necessary stage for the future of the colony. The difficulties of the conquest, with the cultural and biological shock and its dramatic consequences for the natives, did not avoid to a transformation of those societies from the perspective of food history, a reality that can be observed through what happened in that town.
